Product:

Iberian Extra Chorizo

Quality: 

Acorn Fed Certified.

Curation:

Approximately 3 months.

Origin: 

Selected meats (included little loins) from different parts of the Iberian pig raised

 in freedom in meadows and fed with acorns and natural products of the field.

 

Elaboration:

Marinated with paprika, garlic, salt, and other spices, put into a cloth gut and with less salt

than the sausage cular, handmade curation in the dryers of the House “Víctor Gómez” of Guijuelo

 

Tasting File

Outside appearance:

Elongated and cylindrical. Put into a cloth gut.

Inside appearance:

Deep red meat with streaks of fat that melts at room temperature.

Taste and smell:

Meat with a delicated flavor, sweet and not so salty. Nice Smell.

Texture:

Juicy and high friability.

Tasting note

Surrounding smell to paprika which is given by his own dressing. Meat of powerful

 flavour and strong aftertaste

Pairing:

Red wines, beers and sheep cheeses.
